Executive Chef Daniel Wecker reflects: This is one of my personal favorites because of the combination of the elegant, flaky flounder with the tartness of the sauce with the capers. I recommend a rice blend or creamy polenta as the starch and a garnish of chopped parsley. This dish pairs very nicely with Pouilly-Fuisse, White Burgundy, a rich, dry white wine. Sauteed Flounder Grenobloise Sauce Ingredients: - 3 cups of brown chicken stock - 1/3 cup roux (equal parts butter and flour cooked)

A Howard County restaurant that was vandalized last month in an apparent protest against the serving of foie gras has been hit again. Steve Wecker, co-owner of the Iron Bridge Wine Company in Columbia, said Monday that no references were made this time to foie gras. But Wecker suspects that the vandals who broke a window and damaged one of the front doors of the Route 108 property were trying to convey the same message as those who spray-painted "Get rid of the foie gras" while breaking several windows and gluing the lock of the front door March 23. No one has been charged in that incident, police said Since the first incident, which caused an estimated $3,300 in damage, Wecker has added "Foie Gras Friday" to the restaurant's menu and has servers wearing T-shirts reading "Got Foie Gras?"

Daniel Wecker, Elkridge Furnace Inn executive chef and owner, may not even be aware that his words echo an old Latvian proverb: "A smiling face is half the meal." Small wonder that when he was recently asked by a student in a cooking class to name his favorite meal to prepare, Wecker quickly replied, "Whatever makes people happy." With more than 600 sauces in his repertoire, it is safe to say that Wecker, 48, has hundreds of culinary options at his fingertips that make people happy - whether dining in his restaurant, attending an event, or, in this case, learning the art of French cooking.

The corner of Furnace Avenue and Race Road in Elkridge appears to be a fairly isolated place.With the bridge on Furnace Avenue closed and the road detoured, there isn't much in sight for at least a mile except woods, an old empty inn and one house.A child, heading out in the wrong direction, could get lost for hours.But such was not the fate of Lindsay Saxon, the 6-year-old Glen Burnie girl who was abducted from a playground near her home Sunday and driven to Howard County, where she escaped her captor near Furnace Avenue.

Casey Tarman clutched a sweet potato with her fingers in a claw-like formation and pushed down hard with a large knife. When the knife barely budged into the potato, she took a deep breath and tried again. Chef Daniel Wecker walked over and asked, "How are you doing over here?" "This is a big one. Can you help me? I don't think I'm ever going to get this potato cut," the 9-year-old Baltimore resident said, pointing to the reluctant potato. "What do you mean, `Never'? Of course, you can do it," Wecker said.

At one time, Dan Wecker thought he wanted to be a history teacher. Instead, he became chef and owner of the Elkridge Furnace Inn, one of Howard County's top dining destinations. But history still fascinates Wecker. His lovingly restored inn, which dates to 1744, is a showcase for that passion. And so is his cooking. Wecker has created a lecture and lunch series that allows him to share his interest in local history, which he illustrates through food. The lectures attract between 20 and 45 people, many of them regulars.

An upscale wine and coffee bar might seem a perfect fit on Route 108, which serves some of Howard County's most affluent neighborhoods. But people living along the crowded highway fear that a proposed bar there would become another traffic hazard. Stephen Wecker and his younger brother, Robert, hope to attract commuters and the after-dinner crowd to the Iron Bridge Wine Company in the former Crown's Pub across from Clarkland Farms, home of former state Sen. James Clark Jr. Late this month, the Weckers plan to begin serving coffee and pastries to commuters heading to work, starting at 6:30 a.m., and light, California-style fare from late afternoon until midnight, seven days a week.

Jean Poholsky looks forward to dining at Iron Bridge Wine Co. for the upscale ambience as well as for the food. So when she arrived at the Columbia restaurant for lunch with friends Monday, she was shocked to see glass shards covering a stone walkway that had been spray-painted in red with the words "Get rid of the foie gras." An admitted lover of the French delicacy made from the livers of ducks and geese, Poholsky concurred with the restaurant's owners that whoever was responsible for the overnight vandalism could have expressed their opinion differently.

On a recent afternoon, close to sunset, there weren't too many visitors at the Cape of Good Hope, at the southern tip of South Africa. I had the blustery beaches nearly to myself, save for a small colony of penguins and a capering pair of ostriches. These ostriches were the first I'd ever seen in the wild. The one with black feathers, I later learned, was male; another, gray-plumed, a female. I was delighted by their odd, loping gait; their small heads jutting about at the end of long, twisting necks; and their protuberant eyes.

Ever since he was 21, Steve Wecker has been telling his skeptical friends he would leave the printing business to run a country inn, somewhere off the beaten path -- some day."Yeah, right," they always said. "Have another beer, Steve."Now that he's 33, some day may not be all that far off as Mr. Wecker, his brother Dan and their sister, Margie Cobb, are already at work restoring the Elkridge Furnace Inn. The tavern dates from the late 18th or early 19th century, and there are two old houses on the same property at Furnace Avenue and Race Road in Elkridge.

A noted local historian renowned for her knowledge and love of Howard County is publishing an update of her first work. Joetta M. Cramm has completed a 10th chapter for Howard County: A Pictorial History, which shows ways the county has developed since the book was originally released in 1987. People still call her for copies of Howard County, which has been reprinted three times. It begins with the first land grants in the early 1700s and chronicles the creation of mills, roads and the new town of Columbia.
