OXON HILL -- Pity the poor sweet potato pie maker. All too often, the baker must contend with a formidable - possibly unattainable - request: Make a pie that tastes like grandma's. Hers were sweet, but not too sweet, with a sunset orange, spice-flecked filling that tasted like a brisk autumn day. It's not easy to get it right, but some insist that the small crew at Henry's Soul Cafe in Oxon Hill has mastered the art of the sweet potato pie. Believers express their appreciation by showing up en masse as Thanksgiving approaches and walking away with thousands of the golden $7.50 confections.

Dozens of companies are in town pushing their products at the National Products East Expo at the Baltimore Convention Center. I took a strolll around the humongous showroom floor checking out the latest in natural foods, body products and households goods. Here are five things I found interesting at the show: 1. Happy Squeeze Food got its start selling organic baby food in a squeeze pouch and is now expanding its target audience. They are rolling out new flavors that go after older kids and even adults.

A sweet potato pie contest will be held in downtown Baltimore to commemorate Juneteenth Jubilee, an African-American holiday. The contest will be held at Lexington Market's center court from 11 a.m. to 1:30 p.m. June 7. The winner will be flown to Sarasota, Fla., to compete in a national pie contest. All pies will be donated to charity. A pie-eating competition also will be held. Information: 410-889- 1617.

More than 40 daredevil, entertaining and kiddie rides, as well as games and food tonight from 5 to 11 on the fairgrounds. $8 includes all rides. Tomorrow Fair opening. The fair officially kicks off at 10 a.m. and runs through Sept. 6 at the Maryland State Fairgrounds. Cosamin Hot Air Balloon Glow Festival. Catch a great view of the colorful hot air balloons that will soar above the fairgrounds, 7:30 p.m.-9 p.m. tomorrow and 6 p.m.-7 p.m. Saturday.

It's hard to share a feast with a tableful of dietitians without discussing the nutritional quality and fat content of everything. Even when we keep quiet, inquiring guests get the ball rolling with all their favorite food questions, and from that point on, there's no stopping us.A few weeks ago, I went to a Canadian Thanksgiving dinner held right here in Baltimore at Brenda's house.By and large, things looked pretty traditional. Turkey with stuffing was the centerpiece, of course, surrounded by traditional foods to give thanks for. (The one obviously missing dish was the sauerkraut.

If your taste buds itch for truly Southern baking, then you've got to scratch 'em on the goodies at Tina Paul's West Baltimore sugar shack.For Paul -- a former forklift operator who began selling baked goods at flea markets -- "from scratch" is a family tradition: Many of her signature specialties have been passed down from Florence "Puddiny" Johnson, her 91-year-old grandmother."

When I am asked to describe "fusion cooking," I lean toward an explanation that has a specific meaning for me. Fusion cooking is food that I grew up eating.Two totally different cultures became a union -- and so did the food in our home -- when my Japanese mother married my African-American father. Of course, many meals that we ate retained the elements of each cuisine, but at times the dishes borrowed parts from each other to develop a new language of their own.When I first arrived in the United States at age 17, I found that my friends' acceptance of the foreign foods I loved was made easier if their introduction was softened through blending the unfamiliar with the familiar.

Made-from-scratch sweet-potato pie and banana pudding are among the mouth-watering Southern-style desserts on the menu at Gamba's, a casual, family-owned restaurant that opened on Pulaski Highway three years ago. But the last dessert item on the short list was unusual: six "doubled" eggs. Was this some kind of meringue or angel food cake? Well, no. It turns out that the offering was for "deviled" eggs, but the owners didn't want to put the word "devil" on the menu, explained the woman behind the counter.

What can you say about a restaurant that doesn't hesi- tate to sell you a big plate of curried chicken over beans and rice - with mashed potatoes and gravy on the side? Hey, it worked for me, and I'm now a certified fan of Gamba's Soul Food. Gamba's sits in a mainly residential neighborhood in the Idlewylde area of Baltimore County. Inside, the salmon-pink walls are decorated with African-American-themed artwork, as well as faded photographs of some of the dinner plates. Huge wedges of cake and pie beckon from the dessert case.
