Here's the scene: It's late. You spent an hour longer at the office than you planned. You get home, the dog needs to go out, the kids are whining, you're hungry. What do you do?How about this: Go to the refrigerator, take out a complete meal, heat it up and serve.That's what dinner is like for people who employ a personal chef. There's always something in the fridge for dinner."My husband and I are very busy, very rarely home, and when we do get home, we want something to eat, something nutritious," says Grenetta Bartee, a financial adviser who has personal chef Vic Baffa prepare two weeks' worth of meals at a time at the couple's Mitch- ellville home.

When Shirlé Hale-Koslowski tells people what she does for a living, she is often greeted with a blank stare. She is the owner and sole employee of Four Corners Cuisine, a Baltimore-based private chef service Hale-Koslowski operates out of the kitchens of her 10 clients. People have heard of personal chefs for the rich and famous, she says, but she caters to the middle class, not the multimillionaire. Each meal - groceries and labor included - averages $10 to $12 and includes an entree and a side.

A PEEK INTO the reconstruction of a neighbor's home provoked a question: Is that little room over there supposed to be the kitchen? "Yes," said another neighbor, Jim Gebbia. "It's that small because no one cooks anymore." Oh. This came as news to the neighborhood columnist, who can be particularly backward when it comes to being hep - is that the word? - on trends. "All you really need these days is a freezer and a microwave," added Gebbia, no slouch with the skillets himself. Or, as an alternative, one can call Terry Sielert, who will show up with her own pots and pans, with a toolbox full of spatulas and peelers, and just the right amount of eggs and vegetables.

Now this sounds like a blast. The annual Crab & Cruise weekend down in Crisfield is coming soon. Hundreds of seafood lovers from all over the country head to Somerset County every year for the Crab & Cruise weekend. The highlight of the two-day event is Saturday's all-you-can eat crab feast and a sunset cruise on the Chesapeake Bay. But there are late night parties on Friday an Saturday night and a VIP dinner on Friday with celebrity chef Maxcel Hardy, Amar'e Stoudemire's personal chef.

After taking a three-year break from cooking, Johnson decided she missed it too much and worked as a pastry chef in a wine bar and restaurant in Columbia for a year.

Are you still digging through those food-stained cookbook pages stuffed with clippings, looking for a new way with chicken? Are you forever searching for the best chocolate chip cookie recipe? Should you wash mushrooms or not? Whether you have 5, 50 or 500 cookbooks (yes, some of us do), there's a new crop out there and some are worthy of a prime spot on your shelf. Presented with a cache of cookbooks, I had to pick only six or seven as "keepers." (I wanted them all.) So many were beautifully designed with stunning photographs, not just of food, but of faraway places.

Jesus Perez Goenaga, a founder of downtown's Tio Pepe restaurant who as its pastry chef created desserts that were "sinful perfection," died of pneumonia May 10 at Lakewood Ranch Medical Center in Bradenton, Fla. He was 77. Born in Burgos, Spain, he was the son of the personal chef to Francisco Franco, the country's military leader and dictator. His father taught him to scrub stock pots with sand. Mr. Goenaga attended culinary and pastry-making schools and worked in Madrid's Ritz Hotel and the Jockey Club as well as in a San Sebastian restaurant.

At the start of the school year, the culinary ability of many of the students participating in the Calvin Rowdell Culinary Institute was limited to Oodles of Noodles and microwaving hot dogs. That was before Chef Connie arrived. Connie Johnson, a personal chef who has two children at Calvin Rowdell Elementary School in West Baltimore, has been working the entire year with 15 students in the after-school program that she started in memory of her teenage daughter, who died several years ago. She has taught the students the importance of healthful cooking, as well as an appreciation for foreign cuisine.

JUST DAYS AGO YOU WERE DREAMING of a vacation in France, strolling through the Louvre and eating croissants outside a cafe on the Champs-Elysees. Now you'd rather be at home watching So You Think You Can Dance. After all, who wants to be stuck in a long security line at the airport, fighting through the crowds, contending with harassed ticket agents and worrying about what you can or can't take on the plane? Of course, you could get in the car and drive to the beach or take a trip to the mountains.

Janet Althen, an acupuncturist at Contemporary Health for Women in Clarksville, often works past 7:30 at night. By the time she gets home, she is ravenous. "I found myself going from pizza to Chinese food, pizza to Chinese food," she said. Then a client told her about Richard Douville and his personal chef business, Slow Down and Eat. Douville prepares meals for his clients based on their individual tastes. "I was under the impression that only the rich and famous have chefs," Althen said.

Joe Tieperman is the chief financial officer of a company in Emmitsburg, and he doesn't walk in the door of his Waverly Woods home until after 7 most nights. His wife, Leslie, uses a wheelchair and can no longer cook their evening meals. The Tiepermans were getting along OK with takeout food and whatever Joe could toss together after he got home. But they've been eating a lot better in the past few months, ever since they hired Personal Chefs of Columbia. Karen York-Levine, who founded the company about 18 months ago, buys food and prepares several meals in their kitchen.

Thyme for You LLC, a personal chef service in the Towson area, is expanding to Harford County. Personal chefs Beth Andresini of Towson and Jon McGovern of Bel Air spend their days tailoring meals for their clients. The company provides a service for new parents, working parents, people on the go and homebound individuals. "It gives families more time to spend together, by bringing the family back to the table," Andresini said, adding that, as a mother of two boys, she knows the challenges of balancing family and work.
