Michael Mina's self-named San Francisco restaurant has been named Esquire's Restaurant of the Year. That's good news for Baltimoreans. Mina's Wit & Wisdom is scheduled to open in the Four Seasons hotel in November. "If Mina is there the night you visit," John Mariani writes ,  you'll have one of the great meals of your life by an American master. "

A lot can happen in the first three years of a restaurant's life. Things can go haywire. Investors panic, managers quit and staff moves on. But sometimes, not often enough, wisdom prevails. The restaurant considers what works, what doesn't. It reacts, but doesn't overreact, to diners' responses, and it changes things, thoughtfully, gradually, confidently. We know a lot about some of the big 2012 projects and almost nothing about others. But it's looking like 2012 could be the year of the comeback. After a long absence, the founder of the Baltimore's first brew pub is returning to the restaurant business, and by the time summer gets here, diners could be back at a new Donna's in Mount Vernon and a revived Werner's downtown. Until the last contractor leaves and the all of the inspectors have come through, restaurants tend to be reticent about specifics like opening dates.

The Four Seasons Hotel Baltimore will overhaul two of its restaurants this summer. Wit & Wisdom posted announced an opening date, or at least mentioned an opening date in passing, on its Twitter page. Michael Mina's restaurant in the Four Seasons Hotel Baltimore is scheduled to open on Nov. 1. UPDATE (Oct. 12, 10:30 a.m.): A rep for W&W said the opening date has been re-set to mid-November.

Lamill Coffee, the first-floor cafe in the Four Seasons Hotel Baltimore, will be hosting a four-week series of free Saturday morning coffee clinics in January. The free, weekly sessions will highlight coffee extraction methods and coffee roasts. The Lamill team will sample food pairings with the coffee. Lamill is Michael Mina's collaboration with a super-cool Los Angeles-area coffee roaster and retailer. The clinics will introduce guests to the ingenious Hario V60 hand-drip process from Japan and the super sleep Eva Solo from Denmark.

The Four Seasons Hotel Baltimore is about to welcome its first guests, but visitors taking a sneak peek might not realize the hotel isn't open yet. The lobby is bustling with excitement and energy. There's a crew of attractive people sitting at the bar with the harbor as a backdrop. The smell of savory pit-roasted chicken fills the restaurant area. And the spa already has a quiet ambience — and a few clients. They are mostly employees, explains Judith Dumrauf, the hotel's director of marketing.

New restaurants opened at snail's pace over the first 10 months of 2011. All of a sudden, they're arriving at jack-rabbit speed. Zack Mills has been named the new executive chef at Wit & Wisdom, A Tavern by Michael Mina, the everyday restaurant at the Four Seasons Baltimore Hotel. His first day in the position was Monday. Mills, a native of Davidsonville, is the third executive chef for Wit & Wisdom , which is operated by the San Francisco-based Mina Group. The opening chef, Benjamin Lambert, was replaced in June 2012 by Clayton Miller, who is leaving Mina for a job in Florida. "I'm extremely excited about the opportunity," said Mills, who has been with the Mina Group for five years and helped to launch the openings of Wit & Wisdom and Pabu, the Japanese restaurant at the Four Seasons Baltimore.

The new outdoor bar and dining space at Wit & Wisdom has a name: Wit on the Water. The bar seats 12 with additional waterside seating for 85. Along with its new dining space, Wit & Wisdom , the main restaurant at the Four Seasons Baltimore Hotel , is introducing new lunch, dinner and tavern menus. New lunch options include a chilled salmon salad,  New England lobster roll, tamarind-glazed swordfish and a Tuscarora spring vegetable tagliatelle. New dinner listings include "regional tavern classics" like wood-oven roasted Virginia chicken served with black truffle macaroni and cheese and an updated selection of wood-grilled meats and seafood dishes.

Michael Mina's name is familiar to Baltimore restaurant-goers from the suite of restaurants he developed for the Four Seasons Hotel Baltimore - Wit & Wisdom, Pabu and Lamill Coffee. But Mina's base of operations is in San Francisco, and the Michelin-starred chef is a hardcore 49ers fan. He'll be attending the Super Bowl in New Orleans with his sons. Mina has advice for folks throwing a Super Bowl potluck party at home. His cioppino can be made in advance, so the hosts and their guests can give their full attention to the game.

The dancing days are over at Milan . The Little Italy establishment is now prohibited from allowing or providing live entertainment, including disc jockeys, on its premises. The May 31 decision was made in the District Court of Maryland for Baltimore City in what amounted to a default hearing. No one representing Milan showed up. Milan's opponents have long claimed that the establishment was a nightclub masquerading as a restaurant, and they have repeatedly pressed the Baltimore City Liquor License Board to take action.

Four days after Tom Sietsema reported that Wit & Wisdom, A Michael Mina Tavern was looking for a new executive chef, representatives of the Mina Group could not confirm that executive chef Benjamin Lambert was being replaced. Sietsema's one-and-a-half star review of Wit & Wisdom in The Washington Post wasn't a pan exactly, but it probably wasn't the review that the San Francisco-based Mina Group wanted for their signature restaurant in the Four Seasons Baltimore Hotel, located in the Inner Harbor's Harbor East development.
