You can thank Wolfgang Puck. The era of good casino dining is generally traced back to 1992, when the Los Angeles-based chef opened a version of his famed Hollywood restaurant, Spago, at Caesars Palace in Las Vegas. From then on, you didn't have to know a flush from a straight to have a good time in Sin City. Within a decade of Spago's opening, Vegas was a paradise for restaurant lovers. Michelin-star chefs like Thomas Keller and Joel Robuchon came to town. Nobu, Le Cirque and other famous New York restaurants opened on the strip.

Technically, you could open a casino without a celebrity chef. But, why gamble? On Monday, the management of Horseshoe Baltimore announced the two chefs it hopes will be marquee culinary attractions at its casino, which is now under construction on Russell Street. The chefs, John Besh and Aaron Sanchez, will be collaborating on a Mexican restaurant named Johnny Sanchez. While the 222-seat restaurant will offer some substantial dinner plates, the bulk of the menu will be tacos and tostadas, said Sanchez, who was in Baltimore for the casino's announcement.

The sign is up on the new two-story building on Russell Street and the opening date is set for the evening of Aug. 26 at the Horseshoe Casino Baltimore, which will be Maryland's fifth gambling center, general manager Chad Barnhill announced Thursday. "It's exciting, it's coming up quickly," Barnhill told members of the Maryland Lottery and Gaming Control Commission. "A lot to do in a short period of time, but it's an exciting time as well. " In the next two months, crews will have to finish installing 2,500 slot machines, more than 100 table games plus 25 tables for the World Series of Poker room, as well as an array of restaurants including a Johnny Sanchez taco restaurant, Asian noodle bar and Guy Fieri's Baltimore Kitchen & Bar. The $442 million project - being developed by a group led by Caesar's Entertainment, based in Las Vegas - is expected to compete for customers with Maryland Live, located about 13 miles south along the I-295 corridor in Arundel Mills.

Heavy Seas will have its name in lights at Horseshoe Casino Baltimore, the casino under construction on Russell Street. On Friday, Horseshoe announced that a Heavy Seas tavern will be among five Maryland-based vendors in its first-floor casual-dining area, which it's calling the Baltimore Marketplace. The casino said the other Baltimore Marketplace vendors would include Lenny's Deli, which has locations in Harborplace, on Lombard Street and in Owings Mills; the Greenspring Station restaurant Tark's Grill , which will be represented at the casino by a casual bistro named Tark's at the 'Shoe; the Towson-based pizza-by-the-slice chain Mamma Ilardo's , which will introduce a new personal-size pizza concept named Pie-Zetta; and the Mallow Bar , a "crispy treat dessert cafe" specializing in homemade marshmallow treats.

Guy Fieri is coming to Baltimore. Horseshoe Casino Baltimore announced on Thursday that the flamboyant tattooed culinary personality will open a restaurant at the casino currently under construction on Russell Street. Guy Fieri's Baltimore Kitchen & Bar will be open daily for breakfast, lunch, dinner and late-night dining. Baltimore's first casino could have risen more than a dozen years ago on the faded industrial stretch that is now posh Harbor East. Or more controversially, slot machines could have made their city debut in the family-oriented Inner Harbor or at Pimlico Race Course , in the middle of an economically depressed neighborhood. Instead, the city's long and at times fraught path toward slots and table games brought it to Russell Street south of the stadiums, where on Tuesday night the $442 million Horseshoe Casino opens to the public - and begins seeking its niche in an increasingly saturated market of gambling options.
