WASHINGTON -- Could it be the critics were right all along?Coach "Ray Must Go" Handley stepped up to the microphone yesterday and took "full responsibility" for the Giants' fall from grace, which was really more like a leap. Actually, it was just like bungee jumping when the line snaps.But, no. It can't all be Ray Must Go's fault.This is much too big for one man. For once, the conspiracy theory works. Everybody was in on this one."It's time for the players to start owning up to some of the mistakes and problems we have," said quarterback Phil Simms, the one that Ray Must Go refused to play for much of the season.

EAST RUTHERFORD, N.J. -- Ray Handley will be fired as head coach of the New York Giants immediately after the 1992 season, the New York Daily News has learned.There has not been an official powwow yet, but the team's management -- despite its denials yesterday -- is preparing to make the change and fire Handley with one year left on his three-year contract.Handley, 48, has no plans to resign and intends to coach the team in its final two games.But fret not, Giants fans. When the season ends, Handley will go, and the Bill Parcells rumors will intensify.

EAST RUTHERFORD, N.J. -- Bill Parcells is a talking head. Phil Simms is barely talking. And the Giants -- the Giants of Ray Handley and Jeff Hostetler -- are talking about another Super Bowl.It has been an eventful, almost tumultuous, seven months since that January night in Tampa, Fla., when Scott Norwood's kick went right, and wrong, for the Buffalo Bills, giving the Giants their second championship in six seasons.The team, or at least half of it, was sold to hotel magnate Robert Tisch in February.

Ray Handley is obviously a quick study.The scouting report on the new New York Giants coach, who almost got out of coaching the last two years to enter law school, is that he is a sharp guy. It's said that when the coaches go out to dinner, he can take the check and add up each person's share in his head.It didn't take him long to add up the Giants' quarterback situation.Unlike his mentor, Bill Parcells, whom he replaced in May, he passed his first test as a head coach. In 1983 as a rookie coach, Parcells picked Scott Brunner as his quarterback over Phil Simms.

McCormick & Co. Inc. took another major step into the seafood seasoning business yesterday with the announcement that it acquired the consumer products business of Golden Dipt Co., a division of DCA Food Industries of Garden City, N.Y.Terms of the purchase were not disclosed.This is the second acquisition of a seafood seasonings operation by the international spice and flavorings company, based in Sparks. The first was Old Bay seasonings, which was bought from Baltimore Spice Co. in 1990.

2002 Handley Cellars Zinfandel, Redwood Valley ($20). California's Mendocino County tends to produce a style of zinfandel far different from the blockbuster style that prevails in neighboring Sonoma County. The wines generally emphasize elegance over sheer power, and this wine from the reliable Handley winery is a good example. It offers generous black-raspberry fruit and a touch of black pepper. It finishes long and clean and would be an excellent companion to red meat, hard cheese or pasta dishes.

EAST RUTHERFORD, N.J. -- Who said Ray Handley has no sense of humor?Handley, the first-year New York Giants coach, normally is as stoic as Gary Cooper. Every word he utters -- at least in the presence of reporters -- is measured, as if he is visualizing how his quotes will read on an opponent's bulletin board. This is no Buddy Ryan, randomly tossing off one-liners that serve to enrage the other side.So, in typical Handley fashion, he gave a non-inflammatory response to a suggestion that tomorrow night's game with the Eagles in Veterans Stadium figures to be markedly different from those that have taken place the past three seasons.
