Millions of Americans will assume today that the quickest way to a lover's heart is through a luscious box of chocolates, even if it is not the healthiest of gifts.But according to recent studies of chocolate's effects on cholesterol, at least in the medical sense these hopeful Valentines need not worry.National food surveys clearly indicate that chocolate sets many a heart aflutter. But, the studies show, even a 3-pound heart-shaped box of the richest pure chocolate -- as sinful as its 6,900 calories may seem -- is unlikely to stop hearts dead in their tracks.

Would chocolate containing trans fats and sugar substitutes taste as sweet as the real thing? Hershey Co. and other candy makers say yes. The Chocolate Manufacturers Association, whose members include Hershey, Nestle SA and Archer Daniels Midland Co., has a petition before the Food and Drug Administration to redefine what constitutes chocolate. They want to make it without the required ingredients of cocoa butter and cocoa solids, using instead artificial sweeteners, milk substitutes and vegetable fats such as hydrogenated and trans fats.

What's the difference between unsweetened chocolate and bittersweet chocolate? To understand chocolate nomenclature, you need to understand a little bit about chocolate production. The cacao tree, native to Central America, bears large, football-like pods. These pods contain beans that are fermented, roasted and ground. When finely ground, the beans turn into a paste called chocolate liquor, from which all other chocolate products derive. The fat in this paste is cocoa butter. When it is extracted, the powder that's left is cocoa.

Not every woman is happy with the way the man in her life dresses. Lloyd Boston's book Make Over Your Man: The Woman's Guide to Dressing Any Man in Her Life (Broadway Books, $29.95) is here to change that. The book is a style guide to help women bring out the fashionable best in the men they love. Each chapter is devoted to an individual area of a man's wardrobe -- from his suits to his shoes. In the chapter on outerwear, Boston laments that most men treat outerwear as an afterthought, throwing on the most comfortable jacket without realizing it's the first thing that people see. Men need to be more conscious about how dressy or sporty their attire is before deciding on the coat to top it, he says.

From now on, products called white chocolate must include cocoa butter, milk solids, milk fat and sweeteners such as sugar or high-fructose corn syrup. The goal is to eliminate consumers' confusion and prevent imposters from using cheaper ingredients such as vegetable fat instead of cocoa butter.

It was because of the goats, Marti Cook will tell you, that she and her husband Lee got into the soap-making business.And before you can even raise an eyebrow, she goes on to say, "About four years ago we had some goats and we thought, What are we going to do with all this milk? We can't give it away. We can't sell it. We're not a dairy. It's against the law to do absolutely anything with it."Then one day, she continues, they saw somebody selling goat milk soap. Chocolate, despite its high saturated fat content, won't raise your cholesterol level, according to a study done by P.M. Kris-Etherton, Ph.D., R.D. of the Nutrition Department of Penn State University.Untangling the fat-cholesterol mystery has been a long process. Answers become more clear as research becomes more refined. Years ago we thought that high blood cholesterol came from eating too much cholesterol.With time, researchers learned that saturated fats, such as butter, beef fat, lard and coconut oil, raise blood cholesterol much more than the actual cholesterol you eat. Now, more detailed studies show there are several different saturated fats, and their effects on blood cholesterol differ.
