LIKE THE old Carabiniere he is, Alfonso Mannetta will walk the streets of Little Italy next weekend at the 100th anniversary of the St. Anthony Festival, keeping an eye on things, especially the flow of money from the sausage, salad and spaghetti concessions to the coffers of his church. He's done that for years - on special orders from the pastor - and it's a role that suits him and allows him to draw from a previous life the studied and serious countenance of a constable on patrol. In that previous life, Alfonso Mannetta was a young member of Italy's special police force, a branch of the defense ministry, known as the Carabinieri.
