Quick, healthful tofu mousse

August 01, 2007|By Julie Rothman | Julie Rothman,Special to The Sun

Bette Davidson of Baltimore was looking for a recipe she had some years ago for a chocolate mousse made with tofu. Annie Moore of Easthampton, Mass., sent in a recipe for a quick and easy tofu mousse she found on the Internet.

I whipped this delicious dessert up in less than 10 minutes, not including chilling time, and everyone raved about it. It is made with a combination of tofu, bananas and chocolate and has no added sugar or dairy products.

Tofu Chocolate-Banana Mousse

Makes 4 6-ounce servings

8 ounces semisweet chocolate

1 (13.5-ounce) package silken tofu

2 ripe bananas

Melt chocolate in top of double boiler or microwave. Blend tofu and bananas together in a food processor until smooth. Add melted chocolate and blend until color is dark. Before mousse cools, portion into 6-ounce glasses and store in the refrigerator. Chill for about 40 minutes before serving.

Recipe Request

Clifford Edwards of Dundalk is looking for a recipe for old-fashioned fudge similar to what his mother used to make for him before World War II. He says newer recipes are just not the same. His mother's was 5/8 -inch thick and "finger-licking good."
