We will NOT put Swiss cheese or mayonnaise on a cheesesteak," reads a sign behind the counter at South Street Steaks. "If you want mayo, you can put it on yourself. We have packets."

This is only one of several edicts intended to enlighten the College Park citizenry about the delights and demands of Philadelphia cheesesteak consumption. Others include asking for the sandwiches "wit" if you want fried onions, and asking for "whiz" if you want the preferred -- truly the only acceptable -- topping, Cheese Whiz.
