TURKEY, HAM AND CHEESE PANINI

MAKES 4 SERVINGS

1 clove garlic, minced

1 tablespoon olive oil

4 (3-ounce) Portuguese rolls, sliced in half horizontally

2 tablespoons yellow mustard

4 ounces Jarlsberg cheese, thinly sliced

4 ounces thinly sliced deli ham

2 ounces thinly sliced roast turkey breast

2 tablespoons fresh parsley, coarsely chopped

Combine the garlic and olive oil in a small bowl; set aside. Spread the cut sides of the rolls with mustard. On the bottom half of each roll, arrange 1 / 4 each of the cheese, ham, turkey and parsley. Cover with top halves of rolls. Brush the outside of each roll with the garlic-oil mixture. Heat a large nonstick skillet over medium heat and add the panini. Top with a heavy skillet and press down to help flatten. Cook 4 to 6 minutes on each side, or until the cheese melts and the bread is crisp and flat.
