Fragrant bacon, sweet corn adorn salmon

Gerard Campbell, executive chef at the Hyatt Regency Baltimore, says Wild King Salmon With Applewood Smoked Bacon and Corn Hash is one of his biggest sellers. The recipe is for a single serving, he says, "so it could easily be adjusted to the amount of servings."

WILD KING SALMON WITH APPLEWOOD SMOKED BACON AND CORN HASH

MAKES 1 SERVING

two 7-ounce King Salmon fillets

salt and pepper to taste

3 ounces diced applewood smoked bacon

2 tablespoons diced white onion

1 / 2 cup fresh yellow corn (cut from ear)

1 / 4 cup diced Yukon gold potatoes

Season fillets with salt and pepper, and grill to desired temperature. In a saute pan, brown bacon; discard fat. Add onions, corn and potatoes. Saute for 6 minutes. Season with salt and pepper and set aside.

To serve, place bacon mixture in middle of plate. Place salmon on top and garnish with lemon and mixed greens.

Per serving: 880 calories, 103 grams protein, 41 grams fat, 8 grams saturated fat, 20 grams carbohydrates, 2 grams fiber, 282 milligrams cholesterol, 854 milligrams sodium. Analysis by registered dietitian Jodie Shield.
