An autumn treat: yummy, moist molasses cookies

Doris Allen of Woodleaf, N.C., was looking for a recipe for moist molasses cookies. Her husband's grandmother used to make them and he told her, "As you held one in your hand, the cookie would almost fold over."

Zarifa Peddicord of Joppa sent in a recipe from her late mother-in-law that she has been using many years. As she points out, the recipe calls for lard as the shortening. She says that was what was available on the farm. Now she substitutes Crisco.

Her recipe is for simple drop cookies that come out of the oven puffy and stay moist and soft even as they cool. They will keep nicely in an airtight tin for a few days or could be frozen, but they make such a yummy autumn treat that they surely will not stick around your kitchen long.

Mom Barnes' Soft Molasses Cookies

Makes 4 dozen to 5 dozen

1 1/2 cups brown sugar

1 cup lard (or vegetable shortening)

2 eggs

1 cup molasses

1 cup buttermilk

5 cups flour

1/2 teaspoon salt

2 tablespoons baking soda

1/2 teaspoon ginger

1/2 teaspoon cinnamon

Mix sugar and lard. Add eggs, molasses and buttermilk. Add dry ingredients. Drop by rounded tablespoon on greased cookie sheet.

Bake at 400 degrees for 10 minutes. Cool on wire rack.

Per serving: 109 calories; 1 gram protein; 4 grams fat; 1 gram saturated fat; 18 grams carbohydrate; 0 gram fiber; 10 milligrams cholesterol; 156 milligrams sodium
