2000 Hess Estate Cabernet Sauvignon, Napa Valley ($22). It's rare to find a Napa Valley cabernet around this price today, and it's especially exciting when the wine turns out to be excellent. This savory, intensely flavorful, full-bodied red offers generous black-cherry and blackberry fruit, with hints of herbs and chocolate. It's supple enough to drink right now, but has the structure to age at least 10 years. Its complexity and length make it comparable to many California cabernets at twice the price. A real carnivore's wine, it begs to be served with red meat.
