Paraiso Chardonnay, Monterey County ($16). This excellent chardonnay from California's Santa Lucia Highlands (an emerging region of great promise) combines classic structure with gripping, satisfying flavors. The restrained use of oak lets the subtle mineral flavors come through and keeps this wine close to the style of white Burgundy. Flavors of apple, lemon and nuts lead up to a lingering finish. Its complexity rivals many chardonnays at twice the price. This versatile wine would be an exceptional companion to ham or salmon.
