Beef tips

The National Cattlemen's Beef Association offers these suggestions for selecting and preparing a beef roast: Meat should be a bright cherry-red color, firm to the touch and cold. Plan on about 6 ounces of cooked beef per person for holiday gatherings and about 3 ounces per person for everyday meals.

Crab dish is a winner

The winner of this year's Phillips Seafood Crab Recipe contest is Kari Beims of Baltimore. The contest received more than 600 entries -- some from professional chefs -- but Beims, an amateur cook, captured the $1,000 prize with her recipe for Phillips Chesapeake Quesadillas.
