Review: Made with organic ingredients and just the right amount of cheese, these salad-plate-sized fo-caccias are a meal in themselves. The Mediterranean included organic spinach and mushrooms, feta and mozzarella cheese. The Roma Tomato & Basil offered the aforementioned ingredients as well as roasted garlic and mozzarella. Baked in the oven, the crust emerges chewy yet crisp. Stash a few in your freezer for a quick dinner. My only problem with these vegetarian focaccias? They're so flavorful, it's difficult to keep from eating an entire one by yourself.
