Makes 32 small bars
1 box yellow-cake mix
1/2 cup (1 stick) butter, melted and cooled
8 ounces cream cheese, softened
1 pound confectioners' sugar
Mix cake mix with one egg and melted butter. Spread mixture into a greased 9-inch-by-13-inch pan. Beat cream cheese with confectioners' sugar and remaining 3 eggs. Beat mixture until smooth and pour over cake mixture. Bake in preheated 350-degree oven for 1 hour. Wait until the pan has cooled before cutting into bars.
Tester Laura Reiley's comments: "Neiman Marcus' chocolate chip cookie recipe has garnered so much attention that these bars haven't gotten their due. The bars are rich, with a caky base and a gooey topping. No one would ever know that these are made from a boxed cake mix. I might add the zest of one lemon to the cream-cheese mixture just for interest and to cut a bit of the sweetness from the large quantity of confectioners' sugar. Do not overbake this. It shouldn't be too browned, because the sugar can taste burned quite easily."
Stephanie Johnson of Prineville, Ore., seeks a recipe made with potatoes, cheese, green onions and possibly a ranch dressing, eggs, sour cream. The dish "was baked and it was really delicious," she wrote.
Mildred Kriwko of Lake Zurich, Ill., is trying to find a "pork-chop recipe which used brown sugar, Pepsi Cola or Coca-Cola poured over it."
