Use extreme caution when flaming (flambeing) foods with brandy or other liquor. Never open the bottle near an open flame; the flame can follow the stream of alcohol vapor back into the bottle and cause an explosion. Instead, keep the liquor well away from the cooking area, pouring out the required amount into a small pan or heatproof measuring cup.
