Choose a grade of olive oil according to its intended use: extra virgin or superfine virgin for seasoning; virgin or pure for cooking. Taste-test whenever possible; choose the oil with the most pleasing aroma, flavor and color for the money. Purchase olive oil in small amounts and keep the bottle tightly stoppered. Kept in a cool, dark place, olive oil may hold its quality for up to six months.
