To peel fresh tomatoes, first remove the core, using a paring knife.

Make an X-shaped cut on the bottom, opposite the stem end.

Using a wire basket or slotted metal spoon, lower tomatoes into boiling water to cover for 15 seconds.

Remove, drain and immerse in ice water for 5 to 10 seconds.

Use a paring knife to pull off skins.
