1997 Jekel Vineyards Gravelstone Chardonnay, Monterey ($12).

Here's a bright, lively California chardonnay that won't club your palate with excessive oak. Its freshness and vibrant acidity make it a fine match for salty dishes such as ham. It's not the most concentrated chardonnay, but it shows fine flavor intensity and a lingering finish characteristic of cool-weather vineyards. Unlike many California chardonnays, its natural flavors of lemon, apple and white pepper are not masked by excessive residual sugar.
