Choose firm, hard-skinned winter squash that are heavy for their size. When selecting a quantity to store, choose squash with an inch of stem left on; handle carefully to avoid bruising. Whole winter squash in good condition will keep for up to three months in a dark, dry, cool (50 degrees) place. Refrigerate cut squash and use within a week.
