Dressing up cubed chicken

Here's a delicious Oriental dressing. Serve over a salad made of cooked cubed chicken, strawberries, baby greens and thinly sliced jicama, green onions and fennel bulb.

Hoisin-Sesame Dressing

1 2-inch piece ginger, peeled

1 clove garlic, peeled

1/2 cup rice vinegar

1/2 cup light soy sauce

1/4 cup sugar

2 tablespoons hoisin sauce

1 tablespoon Dijon mustard

2 tablespoons toasted sesame seeds

1 tablespoon sesame oil

1 cup vegetable oil

Blend or process all ingredients except oil until garlic and ginger are finely chopped. Gradually add oil while machine is running; blend until smooth.
