Have a 'Heart & Soul'

Heart healthy, full of soul -- and vegetarian. Curtis G. Aikens covers a lot of bases with his new book, "Curtis Cooks with Heart & Soul" (Hearst Books, 1995, $23). Mr. Aikens, who was a college football player, and who has worked in the produce business as well as in film and journalism, could not read until he was 26. Recipes in the new book include parsnip salad, creamy artichoke pasta, and and pumpkin and herbs.

Trends on the table

Sylvia Lovegren explores American food traditions from the marmalade sandwiches of the '20s to today's eclectic fusion cuisine in "Fashionable Food: Seven Decades of Food Fads" (Macmillan, $25). Ms. Lovegren, described as an "avid collector" of old cookbooks, has gathered the best and worst of food trends over the years. There are more than 200 recipes, from noted chefs and magazines.
