Dessert for Passover Angel food cake keeps the faith in healthful way

In a small saucepan, heat the preserves. Add the wine. Cook until the preserves melt and the mixture is well combines.

Passover Chocolate Fondue

Serves 10 generously

1/2 No-Cholesterol Passover Angel Food Cake, cut into bite-sized pieces

1 basket of strawberries, washed and halved

1/2 pineapple, cut into chunks

2 oranges, peeled and separated into sections

4 kiwis, peeled and sliced

2 ripe bananas, sliced

No-Cholesterol Passover Chocolate Dipping Sauce (recipe follows)

Arrange fresh fruit and cake on an attractive platter. Place bowls of chocolate dipping sauce around the table so everyone can reach them.

Per serving: 129 calories; 3 grams protein; 29 grams carbohydrates; 2 grams fat; 0 milligrams cholesterol.

No-Cholesterol Passover Chocolate Dipping Sauce

Makes 3 1/2 cups

4 egg whites

1 3/4 cups sugar

1 1/2 teaspoons vanilla (optional)

dash of salt

6 tablespoons pareve margarine

1 cup unsweetened Passover cocoa

2/3 cup strong coffee or Passover coffee liqueur

In a small mixing bowl, beat the egg whites and salt at high speed until soft peaks form. Switch to low speed and add the sugar slowly. When the mixture is smooth and shiny, stir in the vanilla.

In a medium saucepan over low heat, melt the margarine and cocoa. Stir in beaten egg white mixture. When well-combined, add coffee or coffee liqueur. Stir well. Serve warm, like fondue.
