Shrimp pairs with pasta

In the following recipe, shrimp is combined with pasta for a flavorful main dish.

# Shrimp linguine Serves 8

1 1/2 pounds pink shrimp

12 ounces linguine, uncooked

1 tablespoon olive oil or margarine

1 tablespoon finely chopped garlic

1 cup evaporated skim milk

1/2 cup finely chopped parsley

3 tablespoons chopped fresh basil or 1 teaspoon dried basil

1/2 teaspoon dried thyme

3/4 cup freshly grated Parmesan cheese

Pepper to taste

Rinse shrimp briefly with cold water. Pat dry. Cook pasta according to package directions. While pasta cooks, heat oil or margarine in a large skillet. Add garlic; saute briefly to release flavor. Add evaporated milk and heat just to boiling. Lower heat and stir in shrimp, parsley, basil and thyme. Continue cooking until shrimp are just heated through. Add pasta, Parmesan cheese and pepper; toss lightly.
