Barley pilaf complements spicy sausage as main dish

Satisfy hungry appetites with delicious harvest barley pilaf. Pearl barley is available in the rice and noodle aisle of most grocery stores. Add spicy sausage to create a hearty main dish )) meal.

Harvest Barley Pilaf

1 cup pearl barley

3 tablespoons butter or margarine

1/2 cup each chopped onion and celery

1 clove garlic, minced

1/2 cup diced green pepper

1 16-ounce can stewed tomatoes

2 cups water

1/2 teaspoon thyme

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 pound chorizo or spicy sausage, sauteed and sliced

In large saucepan, saute barley, onion, celery, garlic and pepper in butter over medium heat, until barley is lightly browned. Add stewed tomatoes and water. Add spices and sausage if desired. Bring to boil. Cover and cook over low heat for one hour or until liquid is absorbed. Or, place barley-broth mixture in heavy casserole. Cover and bake at 350 degrees for one hour. Makes four cups.
