This low-fat recipe was takes about 15 minutes to prepare and makes 12 muffins.

Whole Wheat Applesauce Muffins 1 1/4 cups whole wheat flour

1 cup all-purpose flour

1/2 cup brown sugar

1 tablespoon baking powder

1 1/4 teaspoons cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

4 egg whites

1 cup applesauce

1/2 cup nonfat milk

1/4 cup canola oil

1/2 cup golden raisins

Lightly grease 12 muffin cups or spray with a nonstick vegetable cooking spray. Set aside.

In a large bowl combine the whole wheat and all-purpose flours, the brown sugar, baking powder, cinnamon, nutmeg and salt. Add the egg whites, applesauce, milk and oil, stirring just until blended. Stir in the raisins.

Spoon the batter into the prepared muffin tins and bake in a preheated 400-degree oven 20 minutes.

L Unmold onto a cooling rack and cool slightly before serving.

Makes 12. Each muffin has 193 calories, 4 grams protein, 5 grams fat, 34 grams carbohydrates, 0 cholesterol and 146 milligrams sodium.
