Easy banana pie almost makes itself

Just about everyone loves the taste of fresh bananas. This easy recipe makes a delicious treat for any special occasion -- even if it's just dinner tonight.

Very Easy Banana Pie

1 large or 2 small bananas, peeled and sliced

1 envelope plain gelatin

1 cup water

5 to 6 ice cubes

1 0.9-ounce package sugar-free banana pudding

1 teaspoon sugar

1/4 teaspoon ground cinnamon

3/4 cup low-fat ricotta cheese

1 Keebler chocolate-flavored ready-crust pie crust

Mint leaves for garnish

Extra bananas for garnish

2 squares semi-sweet chocolate for garnish

Put gelatin in blender with two tablespoons water. Heat remaining water to boiling and pour into blender. Blend until mixed well. Add ice cubes, pudding mix and ricotta cheese. Blend till smooth and well mixed. Place a layer of bananas in pie crust. Mix together cinnamon and sugar and sprinkle half on bananas. Spread one-half pudding mixture over pie. Repeat process; bananas, sugar and remaining pudding.

Garnish with sliced bananas dipped in melted chocolate. Chill two hours before serving. Garnish with mint leaves if desired, immediately before serving. Serves six.
