Plantains are ripe when the skin is black.

Curried Plantains



Curry powder



Peel, slice and roll plantains in flour that's had a little curry powder and or cinnamon added; saute in butter ununtil golden.

Fried Plantains



Oil for deep frying

Dip ripe chunks of plantain in Bisquick batter and deep fry in oil ununtil golden brown.

This plantain recipe is from Jean Fleming-Mazur of Danville, Pa. She says the recipe comes from a Philippine cookbook.

Maryna Banana Fritters

1 cup sifted flour

1 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons sugar

4 tablespoons milk

1/3 cup water

1 egg, beaten

4 ripe plantains

1/2 cup oil

Powdered sugar, optional

Sift flour, baking powder, salt and sugar. Add milk, water and egg to dry ingredients and mix ununtil smooth. Peel plantains and slice lengthwise into four pieces. Dip in batter and roll lightly in flour. Deep fry in oil, browning evenly. Drain and serve with powdered sugar if desired. Makes 16 fritters.
