The Silver Spring Inn, 8634 Belair Road, 256-6809. The Silver Spring Inn is old-time Baltimore, despite its location beyond the Beltway. The inn is a corner bar with dining room attached -- dark, smoky, the kind of place working folks have always stopped at for a few beers on the way home. And the specialty of the house is old-time Baltimore, too -- Sour Beef and Dumplings. The oh-so-tender beef was accompanied by two average dumplings and topped with a rich, gingery, almost sweet gravy. It was everything Sour Beef should be. The rest of the menu features sandwiches, fried appetizers and reasonably priced entrees. $inexpensive. (Last visited 2/91.)

Syrumie Cafe, 3219 Eastern Ave., 563-2787. In the heart of Highlandtown, a mere stone's throw from Haussner's, there's a little bit of ancient Mesopotamia. Syrumie Cafe honors the traditions of the Middle East with a mural of the region as it was some 3,000 years ago, and with a menu of home cooking. (The owner is Egyptian, the recipes are his mother's.) Try beef-stuffed, yogurt-sauced "holy zucchini" and shish tawook, exquisitely marinated and grilled chicken breast. $$moderate. LYNN WILLIAMS Arnold & Company, 10024 Washington Blvd., Laurel, 725-3800. Some restaurants swim more down the center of the national bloodstream than others. They live on strips of highway marked by forklift distributorships and the flags of car lots, and in them, people order steaks, eat big baked potatoes and promise themselves good desserts. At Arnold & Company -- just such a place -- our best orders were Cajun-cooked fish, crab cakes, steak (skip the peppercorns), cheesecake, and French silk pie.
