Sesame Pork Salad
3 cups cooked rice
1 1/2 cups slivered cooked pork or chicken
1/4 pound fresh snow peas, trimmed and cut in julienne strips
1 medium cucumber, peeled, seeded and cut into julienne strips
1 medium red pepper, cut into julienne strips
1/2 cup sliced green onions
2 tablespoons sesame seeds, toasted, optional
Sesame dressing, recipe given below
Combine all ingredients except dressing; stir well. Toss with sesame dressing. Serve at room temperature or slightly chilled.
1/4 cup chicken broth
3 tablespoons rice or white wine vinegar
3 tablespoons soy sauce
1 tablespoon peanut oil
1 teaspoon sesame oil
Combine all ingredients in jar; cover tightly and shake vigorously. Makes about three-quarters cup.
