Turn mild ground turkey into great-tasting burgers with the addition of savory herbs. The addition of seasoned vegetables makes this a great appealing dish. For leanest ground turkey ask your butcher to grind boneless, skinless turkey. The fat content of pre-ground turkey varies. Look for a product labeled "turkey meat," which indicates that it does not contain skin.


2 egg whites

1/3 cup soft bread crumbs

2/3 cup finely chopped onion, divided

3 tablespoons snipped fresh parsley, divided

2 cloves garlic, minced

1 1/2 teaspoon dried basil, crushed, divided

1/2 teaspoon dried tarragon, crushed, divided

1/2 teaspoon salt

1/4 teaspoon pepper, divided

1 1/2 pounds ground turkey

1 medium zucchini, sliced

1 medium yellow squash, sliced

1 1/2 cups sliced fresh mushrooms

1 tablespoon vegetable cooking oil

1 medium tomato, peeled, seeded and chopped

In a medium mixing bowl beat egg whites until foamy. Stir in bread crumbs, one-third cup onion, two tablespoons parsley, garlic, one teaspoon basil, one-quarter teaspoon tarragon, salt and one-eighth teaspoon pepper. Add turkey; mix well. Shape into eight one-half-inch-thick patties (mixture may be soft).

Spray cool broiler pan with non-stick spray coating. Broil four to five inches from heat for 9 to 10 minutes or until no longer pink, turning once. Serve on top of vegetables.

To make sauteed vegetables: In a 12-inch skillet cook the zucchini, squash, mushrooms and remaining onion in the oil over medium-high heat until crisp-tender. Stir in tomato and remaining herbs and spices. Heat through.
